A pie to die for….

LCHF GRUYERE CHEESE PIE with BROCCOLI

Recipe!
You need:

For the Crust
3 dl almond flour (grained almonds)
3/4 dl sesame seeds (without shell)
1 tablespoon Flohsamen gemahlen /Psylliumseeds grained, you can get it at the bio shop.
1 teaspoon salt
40 g butter
1 egg

For the Filling
300 g Gruyere cheese, grated
4 eggs
2 dl full cream
1/2 teaspoon salt
Nutmeg, grated
Black pepper
Broccoli

For the Topping
Tomatoes

Step by step:
1. Mix the almond flour, sesame, Psylliumseeds, salt, butter and egg together.
2. Put the dough in a pie tray, use your fingers to press it out and up on the side. Easier with wet hands.
3. Put in the fridge for 30 min to rest.
4. Boil the broccoli for a couple of mins.
5. Bake the crust in the oven for 8 min on 180 degrees C.
5. When crust is done (and out of the oven), turn the heat up to 200 degrees C.
6. Whip eggs and cream together add salt, nutmeg and pepper, and after that the cheese.
7. Put the broccoli in the crust/ pie, add the rest on top/around.
Slice tomatoes and put it on the top.
8. Bake in the middle of the oven for about 25-30 min.
Let the pie cool down a bit before serving it…

Tip! Pie is even better next day when you heat it up….!

Tour de Bodensee / Lake Constance

Dream team cycled around (almost) Bodensee last weekend.
Me and Chris headed to Lindau after work on Thursday and Friday morning we met up with Veronica and Bernd 9 am sharp. The weather wasn’t really on our side as it was poring down from time to time but we were equipped with waterproof outfits! (My poncho is amazing)
Good food, wine and beer! Laughs and dance moves, and much much more…

Awesome weekend – just bounce!!

Friday was also an evening of blueballs. Live music, friends, bubbles, beer sun and a summer rain.

Saturday was a rainy day so we stayed inside, chilling with a book or a movie.
Sunday we started up with national spa, then a long lunch at Montana. After that it was time for some table tennis and all of the sudden it was 6 pm.. We went for an after game beer and then some quick grocery shopping before heading home. Not a bad weekend!
Now it’s a four day week coming up then it’s time for Como.

Blue balls – Luzern

Yesterday my STs and I plus men (not mine) went to blue balls and watched some bands, the sun was out a little bit and weather was stabile.
We started at the pavilion with a rather depressing band.. So we went over to schweizerhof, and there it was a brilliant two men (woman and man) band!
I didn’t stay too long so no clue what kind of trouble the rest got into ;)

Travel coming up

Right know I can’t wait for next weekend (long weekend) as me and Chris are heading down to Como. Viva Italia.. No hotels/B&Bs are booked, we will hunt for the cute little place while we are there. A risk-maybe, fun-absolutely.

2 weeks after that we going on the bicycle weekend with V & B around Bodensee, all hotels are booked there, hah!

September is the month of England. First we do a weekend in London, and 2 weeks after a wedding and some extra days by the coast. I miss London..We booked flights and hotel at the same day, that never happens.

Then we have October-November when we are heading to Colombia and Caribbean, woooooho!

Yes I’m counting down every minute for holiday.

I would love to be able to squeeze in a weekend in Tuscany with the STs as well, and stock up on some wine, but don’t know if that’s possible?

(Surprise) Weekend in South of Sweden!

 

 

Last Thursday I went on a “secret” flight to Copenhagen. I took the train over to Malmö and there my sister Madicken and her boyfriend John picked me up at the train station and we walked over to the small square, which is packed with restaurants and bars. We found a table at one and then my cousin Filippa joined us for dinner, how nice!

 

Dinner and drinks later it was time to head back, a very cheap taxi ride, a stop at the kiosk for candy and cheese doodle (wtf?!..) and we entered the apartment just before midnight.

White Russian and talk on the balcony and the time has passed 2 am…Late for Moi on a school night!

 

Got my bed made and I went to sleep…woke up way too early due to the sun but couldn’t complain. I have the ability to “work from home” so got on my computer and looked through my emails while I was waiting for M & J to wake up.

 

Breakfast and a lot of coffee later we headed down to the train station again, for my next stop this weekend –  my secret mission, to surprise Kristin and Charlie at their new home!

 

A train ride, bus ride and a taxi later I rocked up at their house, and got welcomed with a VERY surprised scream, tears, and laughter! (a success of course!)

 

Charlie had to go back to work (I came over lunch) and so did me and Kristin. Well after she showed me around of course.

 

After work day was over Kristin went and picked up Erin that was in the neighborhood and was gonna stay the weekend at K & Cs place.

 

I stayed with Charlie and enjoyed the pool with a glass of wine.

 

BBQ-dinner, box wine, strawberry drinks, box-wine, Rum, dancing, singing, dancing, skinny dipping, handstand competing, many hours later we crashed in bed… SO FUN!

 

Saturday we didn’t feel too good, but we had sun, pool, a big garden, so after a nap here and there, we slowly started to feel better (or at least K and E, Charlie was fine..typical..) so they did some gardening, I laid on the grass and watched them… After my 5th nap that day we finally felt ready to get dressed (hello no neighbors, we lived in bikini and love being topless..) so summer dresses on, Charlie took the wheels and drove us to Bastad. We enjoyed a well deserved dinner (we didn’t really feel like eating before, we cannot party like we are 21 when we are almost 10 years older than that..it just doesn’t work..and Saturday told us a lesson, once again.)

 

After dinner we went down to the beach and did a walk around.. saw the sunset .. very very pretty!

 

I stocked up on candy and then we headed back to the house. A movie was put on, I stayed for 15 min then I went to bed, K was already a sleep in the sofa, and I got an update the next day that neither Erin or Charlie was able to stay a sleep the whole movie.. ha ha, viva-party-like-a-21-year-old-feeling-like-crap-the-day-after…

Sunday the sun was still with us so we enjoyed a nice breakfast outside and then a couple of hours in the pool, where we (of course) solved all the problems in the world..

 

5 pm was my train from Helsingborg to Copenhagen airport so we went to Helsingborg a little bit before and enjoyed a late lunch and a beer next to the sea.

 

Such a great weekend! So happy to spend time with my love Kristin and of course Charlie!

 

I will be back and bring my man with me.
